A Balinese Dish: Chicken Betutu

One of Balinese culinary heritage is Ayam Be Tutu. This meal is so popular even for non-Balinese. And Gilimanuk in Jembrana regency, is the ‘nest’ of this yummy food.Gilimanuk is like a door of Bali since it is a harbor area where the ship brings many people come in and out Bali. No wonder, along the way to the harbor there are so many warung (food booth) which sell various food. Yet, most of the warungs in this district sell Ayam Be Tutu.

A couple years ago, a famous warung selling Ayam Be Tutu was never lack of customer. Every single day Men (Mrs.) Tempeh’s warung served hundreds orders. Unfortunately, at about two years ago Men Tempeh passed away and her warung was closed.Yet, another warung still offer the same taste as Men Tempeh’s Ayam Be Tutu. Standing on Mutiara Street at Gilimanuk area, Bu Lina’s warung serves two kind of Ayam Be Tutu: boiled and fried. It takes a minute longer for the fried Ayam Be tutu to be served. But, the time you have spent for this fried Ayam Be Tutu is not fruitless since you will get a fantastic dish: a fried chicken with crunchy layer on the surface but moist inside. The flavor is perfectly delicious with a complement of Plecing (a Balinese cooking made from swamp cabbage mix with hot sauce) and two kinds of hot sauces in different plate. The boiled Ayam Be Tutu also has the same complement but the chicken itself is served with little bit broth.In the early morning Bu Lina’s employers start to boil chickens mix them with secret spices and many chilies. Indeed, the taste of Ayam Be Tutu will be not spectacular without chili. The process of boiling these chickens takes 5 hours even more to make the spices penetrate to the chicken and tenderize the flesh. In cooking these chickens the employers use firewood instead of gas. “The key why the taste of our Be Tutu is different is the firewood,” one of Bu Lina’s employers explained. No wonder many people adored Bu Lina’s Ayam Be Tutu.Everyday this warung can cook 100 chickens to fulfill the order. “People who come to Bali through the sea always have a lunch here. They usually buy 1 up to 2 chickens as a presents for their friend,” she said. Even more, Bu Lina serves and distributes Ayam Be Tutu to Jakarta and other regions outside Bali.With only Rp 50.000 per Ayam Be Tutu you can taste a delightful Balinese food with your friends or family. Open at 8 pm and close at 9 am, Bu Lina’s Ayam Be Tutu can make you lick your finger after eating it. Yummy!

GREEN HOUSE

The maxim, " Don't judge a book by its cover" certainly applies to one new eatery in Kelapa Gading, North Jakarta. In all appearances Green House looks like many other rumah makan (small restaurant). But, don't be deceived by its seeming ordinariness. The food is great value for money, the premises are clean, the staff friendly and helpful. Even the customers - there are many regulars - are friendly and welcoming. Many Green House customers are school children and mothers who come to pick up their children from school; others seem to be young executives and housewives.

Green House occupies the ground floor of a ruko (shop-house). It has no air-conditioning but is quite cool if you sit on the chairs far from the entrance. It has only around five large tables and from whatever chair you are sitting in you are likely to be faced with a statue of a smiling tubby Buddha, as there are six of them - perhaps he is considered the patron of gastronomical delight! Facing a large privately run high school, SMU Tunas Karya, children still in uniform are often seen there at lunchtimes and after school hours. They usually eat from the cafeteria-style section at the front where they can get rice and a generous selection of five other side dishes for only Rp 6,000, such as Rendang Kari (Curried "Meatballs" made from dried mushroom), Tahu Rumput Laut (Tofu and Seaweed), Tempe Asam Manis (Sweet and Sour Tempeh), Balado Kentang (spicy potato) plus the vegetable soup of the day. The menu is changed daily as the school children always look forward to eating something new.

But, however tempting that section seemed - to really sample their distinctive cuisine, one must order from the menu. The menu is divided into soups, around 15 or so choices including Asparagus Soup, Tom Yam Soup, Corn Soup and Soup Kumis Naga (Dragon's moustache, which I was assured was made of fine black seaweed); rice and noodle dishes; vegetable dishes; tofu dishes; a sweet and sour selection; "seafood" selection, including vegetarian calamari; and fried munchies (gorengan) such as Udang Tempura (Prawn Tempura) and Satay. Drinks include fresh juices such as orange, melon, tomato, carrot and watermelon, along with the usual selection of teas. Unfortunately for those who like to end their meal with something sweet, like many other vegetarian restaurants in Jakarta, there are no deserts.

We were guided through the menu by Pak Kim Sui who enthusiastically shuttled back and forth and piled up our table with dishes he recommended. The Samudra Kailan featured crunchy kailan greens in a thick sauce with seaweed, "prawns" and mushroom. Sapo Tahu Jepang used silky Japanese tofu, in a delicately flavored sauce with veggie "ham", and seaweed. The Udang Isi Ham Saos Mentega ("Ham" stuffed "Prawns" in Butter Sauce) was heavenly. Also worth trying is Jangki Asam Manis (Sweet and Sour "Fish"), a tangy sauce accompanies the "fish" with strips of bell pepper and carrot. The Udang Tempura (Prawn Tempura) is also delectable.

Portions are generous. The Asparagus Soup for example at Rp 12,000 for one serving was enough for three people. A rice or noodle dish is only Rp 7,000, while sweet and sour dishes, tofu dishes and the gorengan are all between Rp 10,000 and Rp 15,000. Fresh juices are only Rp 3,000. A Saturday special is Bubur Hong Kong (rice porridge, Hong Kong style).

A word of warning about the location; although the address reads Jl. Boulevard Raya it is in fact off the main road behind the corner branch of BNI bank. The easiest way to find it is by taking Jl. Boulevard Barat and turning right at the traffic circle into Jl. Boulevard Raya. Take the small road alongside the bank and Green House is on the second street on the left, opposite a large school.

A branch of Happy Vegetarian (ex Happy Buddha) restaurant in Bali and Malang, Green House has only been open four months. Judging by its wonderful fare and loyal clientele it should be around for a long time to come.

We feature Traditional Balinese Food, freshly prepared and delicious.

Our specialty is Balinese Smoked Duck. If you would like to sample
the gourmet dish please order one day in advance as we need 12 hours
in which to prepared the ingredients. The Duck is first marinated in ginger, garlic and our secret Balinese spices, them wrapped in the leaves of the Pinang Tree and slow roasted. once cooked to perfection the Duck is served with three vegetables, Balinese Bregedel (Tempura) rice, Sambal and Brem (Balinese Rice Wine). This fine meals serves 2.

The Gado Gado legend

Established in the 80's, Gado Gado was once of Bali's most fashionable clubs, and like all good things, it has matured with age, reincarnated (as we are in Bali) in the summer of 2001, to become one of the island most rated restaurant.

The modern open space creates a European ambience under a traditional alang-alang roof, the wooden deck is cooled by the sea breeze coming from the Indian Ocean and the restaurant is blessed by the Pura Camplung Tanduk, the Seminyak Hindu temple, its immediate neighbor.

A multi-functional space which can easily be arranged to accommodate large groups of up to 800 people for parties, weddings, special events or anything you can dream up.

Bali Restaurant

The two story restaurant features a number of casual corners to enjoy a drink or a meal, and Ubud's only air-conditioned lounge. A walk-in wine room, creative cocktails and some very funky touches make this a memorable restaurant at any time of the day or night.

The Food

Lamak's kitchen offers Balinese, Indonesian, Asian and international food. Serving from separate a la carte menus for lunch and dinner, Chef Ifah's dishes retain the flavorful origins of the cuisine, with innovative interpretation. This is not fusion food by any means. Chicken Kiev maintains its integrity, although wrapped in Won Ton skins. Chili Marinated Prawns stand out on their bed of Green Papaya Relish. Brule is still brule, with a hint of orange and ginger.

The Atmosphere
Dramatic steel sculpture contributes riveting accents to the atmosphere against striking burgundy-colored walls. The decor is anchored with bold, punched-out steel panels mounted in relief and freestanding, embellished with Lamak's unique logo. Local stone statuary is complimented by unique resin sculpture in whimsical shapes, such as twin hounds illuminated.
